Egg White and Salmon Breakfast Frittata


Number of Servings: 8 Ingredients 8 egg whites* 1/2 tsp salt 1/4 tsp black pepper 1/2 can Pink Salmon (drained of oil) separated with a fork 1/4 cup chopped green onion 1/4 tsp minced garlic (not the jar kind!)


Using your wire whisk with loops*, beat egg whites until frothy, about 3-4 minutes. Preheat 10-inch omelet or *Frittata pan with non-stick spray. Pour egg whites in Frittata pan, sprinkle salmon, green onions, and garlic over the whites. (Experiment with your other favorite small diced vegetables.). Place in oven preheated at 375 degrees and cook until eggs are set, about 10 minutes. Remove, slide out of pan, and cut into slices.
