Chef Dini Klein's top secrets for hassle-free meals

Teriyaki Chicken Pizza
Serves 4

1 tablespoon olive oil plus more for cooking
3 boneless skinless chicken breasts, diced into one-inch cubes.
2 tablespoon store-bought taco spice (or homemade if desired)
2 teaspoons paprika
salt to season

1 cup marinara sauce
1/2 cup teriyaki sauce

To finish:
4 flat breads or naan bread
3 cups steamed or roasted vegetable of choice (Brussels sprouts or broccoli are great here)

Place chicken in a storage bag and add chicken, one tablespoon of oil, and spices. Mix around to fully distribute spices.

Heat a large pan with 1-2 tablespoons of oil and add the chicken. Cook until fully cooked through, moving around to cook and brown all sides. Remove to a plate.

To make the sauce mix together the marinara and teriyaki in a small bowl. Set aside.

To Assemble:
Place 4 flatbreads on a parchment lined baking sheet.
Spread the sauce over flat breads.

Top with taco chicken and roasted Brussels sprouts, or other vegetable of choice. Bake at 450° for 15 minutes until toasted and hot.

Finish with any additional raw vegetables you like including scallions, hot peppers, and cilantro as desired. You can even crack an egg on these and place back in the oven for an even more delicious and filling dinner!
