Smoothing out your Buttercream

davidbuttercream Tip: Air pockets and lumps have an irritating way of making themselves noticeable when you’re making buttercream in an electric mixer. One very effective way to get those lumps and bumps out and make your icing smooth as silk is to take about 2-3 Tablespoons of buttercream in a small microwavable dish, and zap it in the microwave for about 30 seconds or until butter cream is melted and liquidy. As you are mixing your buttercream, pour the melted buttercream back into the batch of mixed buttercream—the heat from the microwaved buttercream will smooth all the lumps out and your buttercream will look smooth & delicious.
