Two Great Baking Powder Tips
Baking powder typically has a long shelf life but over time loses its potency. Most baking powders can be used for a whole year. I bake at high volumes, so for me, a can of baking powder is used up within a month, and even if it’s not, I usually throw it out after 30 days and replace it with a new one. Always be sure to keep your baking powder in a cool dry place. To test if your baking powder is still potent take a teaspoon of baking powder and add it to 1/3 cup of water and if it bubbles, it’s still potent.
Out of baking powder? Here’s a quick substitute: Mix 2 parts Cream of Tartar and 1 part Baking Soda. For example, 2 teaspoons of Cream of Tartar plus 1 teaspoon of Baking Soda…and voila! You have homemade baking powder.
