Fast Meals throughout the Day


As a mom, I'm constantly on the go. I don’t have the time to devote to a gourmet meal. I want something quick and easy that still tastes good. Well these meals are just that and more! They taste like you worked in the kitchen all day long when, in reality, you just whipped it up and put it in the oven.

Now that you have extra time in your day, what do you do with it? One thing that has been on my heart is devoting more time to the Lord. I’d really like to take the time to dive into His Word and fellowship with Him more through prayer. Hosea 10:12 says, “Sow righteousness for yourselves, reap the fruit of unfailing love, and break up your unplowed ground; for it is time to seek the Lord, until He comes and showers His righteousness on you.”

Personal relationships with your family and friends require time and effort. If you aren’t communicating with them on a regular basis, those relationships aren’t firm. We can compare those relationships with our relationship with the Lord. If we aren’t consistently seeking Him and communicating with Him, we are letting our relationship with Him fall to the wayside. James 4:8a says, “Draw near to God, and He will draw near to you.” When we seek Him diligently, our relationship with God flourishes.

Apple Puff Pancake

This is so yummy! It makes your house smell like you've just baked a fresh apple pie and it tastes just as good as one, too!


2 Tablespoons Butter

1 Cup Milk

3 Tablespoons Sugar

1 Teaspoon Vanilla Extract

6 Eggs

1/2 Cup Cottage Cheese 2%

1 Cup All Purpose Flour

1/2 Teaspoon Baking Powder

1/2 Teaspoon Salt

1/4 Teaspoon Cinnamon

For the Apple Topping:

2 Tablespoons Butter

2 Medium Apples, cut into thin slices

1 Tablespoon Brown Sugar

1/2 Teaspoon Cinnamon

Preheat the oven to 425 degrees. Place the butter in a deep pie plate and melt in the oven. Once melted, remove and set aside. In a blender, place the milk, brown sugar, vanilla, eggs, cottage cheese, flour, baking powder and salt. Blend until combined and smooth. Pour batter into the pie plate containing the melted butter and bake for 25 minutes, or until puffy and golden.

While the pancake is baking, make the apple topping by melting the butter in a sauté pan over medium/high heat. Add the apple slices to the melted butter. Stir in the sugar and cinnamon, and sauté until apples are soft and fragrant. Once the pancake comes out of the oven, pour the apple topping on top and cut into wedges. Makes about six servings.

Ham and Cheese Sub

I know what you’re thinking, “This sounds like something I would get at a chain fast food place!” Don’t let the name fool you! This sub is baked in the oven so that the cheese gets melted and gooey and the bread has a little crunch to it. Not only is it easy to make; it’s simple, delicious and it serves an army...well maybe just six. But you get what I mean!


1/4 Cup Mayonnaise

2 Tablespoons Mustard

1 Tablespoon Honey

1/2 Teaspoon Salt

1/2 Teaspoon Pepper

1 Large Baguette French Bread (not the skinny kind)

1 Tablespoon Butter, softened

4 Smoked Maple Ham Steaks or 12 ounces (I use Farmer John’s Brand)

8 Slices Medium Cheddar Cheese

Preheat the oven to 400 degrees. Line a baking sheet with foil and set aside.

In a small bowl, combine the mayonnaise, mustard, honey, salt and pepper until smooth, and set aside. Take the Baguette and cut it in half. Cut the rounded top off the top half of the bread, making it sturdy and flat. Butter the topside of the bread you just cut. Then, spread the mayo-mustard mix evenly onto both the top and bottom half of bread (just the inside). Place the bottom half of the bread onto the baking sheet. Butter and assemble the sandwich by layering four slices of cheese, overlapping them slightly. Layer the ham steaks on top of the cheese in an even layer. Bake in the oven, without the top half of the bread on for five minutes. Take it out of the oven. Layer another four slices of cheese on top of the ham, and put the top part of the bread on (butter side up). Bake for another 10 minutes or until lightly golden on top. Makes six servings.

Lemon Caper Chicken Breast Halves


4 Chicken Breast Halves with ribs, bone in

Garlic Salt

Lemon Pepper

8 Tablespoons Butter, softened

3 Lemons

Extra Virgin Olive Oil

4 Ounces Capers

3 Cups Water

Preheat the oven to 375 degrees. In a 9x13 dish, place the chicken breast halves. Generously season the front and back of the chicken with garlic salt and lemon pepper. Rub two tablespoons of the butter all over each piece of chicken (two tablespoons of butter per piece). Cut two lemons in half and squeeze half of a lemon over each piece. With the last lemon, cut that into slices and layer 2 to 3 slices on top of each piece. Drizzle them generously with extra virgin olive oil and pour in the capers, with the juice over the top evenly. Pour the water at the bottom. Cover with foil and bake for an hour and a half. Remove foil and cook for another 30 minutes or until the chicken is cooked through and the juices run clear.

I'm so excited about these, giddy just thinking about them because they are so good! You can whip them up so fast, too! How often do you make an amazing dessert with just two ingredients? Just a great treat anytime of the day!


3 Cups Vanilla Ice Cream

2 Cups Orange Juice, no pulp

Puree the ice cream and orange juice in a blender until smooth, and serve! Makes four servings.
