Grilled Jerk Chicken Salad

Relationships add so much value to life and spending time with the people you care about can only get even better when there is good food involved. However, due to COVID-19, you may not have been able to give these relationships the attention and nurturing you were accustomed to. Have no fear! It’s time to reconnect, and reconnecting over a delicious meal is sure to get you off to a great start. So what will you make? Try this grilled jerk chicken salad that is sure to spark your taste buds and good conversion.

Ingredients:

  • 4 boneless skinless chicken breasts

  • Jerk marinade (you can use a store bought marinade such as Walkerswood Traditional Jamaican Jerk seasoning)

  • Salt & pepper

  • 1 whole lime for garnish

  • Lettuce (romaine and/or spinach is a great choice, with purple cabbage and carrots for color)

  • Tomatoes

Directions:

  1. Allow the 4 boneless skinless chicken breasts to marinate for at least 30 minutes and up to 2 hrs in the Jerk marinade and salt & pepper to taste.

  2. Cook on hot grill searing for 10-11 minutes on each side, then move to the cooler side of the grill or finish in the oven. 

  3. After allowing the chicken to rest for 5 minutes, slice and serve over your favorite green salad with a balsamic (for a sweet and spicy combo) or creamy ranch dressing (for spicy/cool combo). 

  4. You can slice the lime and grill to get some beautiful grill marks on it and then squeeze the lime juice over sliced chicken.

Keep in mind that any of the above ingredients can be omitted or substituted for others that better suit your palette.
