The Question of the Day: A Dinner Idea on the Fly
It’s evening, let the end-of-day tasks begin! Starting off with the question that’s been at the back of your mind all day and asked every day by your spouse or children, “What’s for dinner?”. If you’re like me, you might start to think, “what did we have last” or “what can I whip up quickly?”
Well then, this is a recipe to add to your collection: sheet pan meals! You can toss everything on a foil-lined sheet pan (can we say easy clean up?) and pop it in a preheated oven. 30 minutes to an hour later, and voilà, dinner.
This meal can be customized to fit your diet and pantry. Don’t worry if you don’t have all these ingredients or forgot to pick something up while at the store. The idea is to use whatever you have on hand. Here is just one recipe idea:
Ingredients
Mixed bell peppers (green, red and yellow)
2 links of smoked sausage (turkey or chicken sausage can be substituted to fit dietary needs)
½ package of sliced mushrooms (Portobello works well here)
4 Russet potatoes (substitute with sweet potatoes if you prefer)
½ a red onion
Recipe
Preheat the oven to 375 degrees
Chop onions, bell peppers, mushrooms and potatoes. Set them aside (tip: put your chopped potatoes in cold water to prevent oxidation)
Slice the smoked sausage and place it on a foil-lined sheet pan
Drain potatoes and pat dry
Then, add to a mixing bowl along with the other chopped veggies. Sprinkle with two tablespoons of olive oil, salt, cracked black pepper, smoked paprika (if you want to spice it up swap the salt for a Cajun seasoning or add cayenne pepper)
Slide into the oven and check after 15 minutes, turn potatoes for even cooking
Serve with toasted sourdough or garlic bread
