TLC: Self-Care & Self-Love with This Salmon Sandwich

Food is an awesome springboard to discovering new and rediscovering favorite flavors.  A quick bite just for you is a great way to give yourself some TLC. This smoked salmon sandwich is packed with savory flavors fit for any meal of the day. To make it even more luxurious, sip a mimosa (or mocktail) simply because you deserve it!

Ingredients

  • 1 package store-bought smoked salmon

  • 1 teaspoon of seafood seasoning

  • 2 tablespoons mayonnaise

  • 1 tablespoon of capers

  • 1 egg

  • English muffin (or bread of choice)

  • Arugula

  • Veggies of choice, such as red onion (thinly sliced), cucumbers (thinly sliced), avocado and tomatoes

  • Capers

  • Orange juice

  • Champagne

 

Recipe

  • Mix seafood seasoning and capers with 2 tablespoons of mayonnaise. Set aside. 

  • Cook egg sunny side up (the yolk should still be runny).

  • Toast English muffin (or bread of choice) and then spread herbed mayo on both sides of the English muffin.

  • Place sunny side up egg on one side of the bread, add three pieces of smoked salmon, add your thinly sliced veggies.

  • Finally, top with arugula and top piece of bread. 

  • Get out your champagne flute and fill the glass halfway with orange juice and top with champagne or sparkling cider for a mocktail.
